Support changing types for schema fields.

Some schema providers may create fields as single value when they are later required to be multivalue, such as the CSV connector. To do this currently, the field must be removed and re-added as a multivalue field. This may be a bit of work as the validator types available may change for some types.

Tony, can't fields be modified? Or have I misread this issue?

Changing issue type to Improvement. It's not that fields can't be modified, just that they need to be removed and readded to make them multivalue. This is not pressing by any means.

Fields can be updated but the types cannot.
